This variety of Muscat is almost certainly one of the oldest in the world. It was very appreciated in ancient times by the Greeks and Romans and the finest and most elegant grape of the Muscat varieties.
To preserve the great qualities of these grapes, and after the enologist has determined the optimum point of ripeness, the harvest is collected by hand during the coolest hours of the night.
Grapes arrive at the winery in exceptional conditions of quality, where they are stemmed and macerated with their skins for 30/40 hours.
After this process, the best juice of these grapes is extracted by gravity and the fermentation starts with a strict daily temperature control.
